Judi is going to kill me for writing about this but a big part of her visit with us centred around restaurants and food. Not her fault! It's just what we do. Food is an important part of life here. We have so many fresh and tasty local products and we have the time to enjoy prepping meals. And we also have so many nice restaurants in San Ignacio and area. So this blog is dedicated to eating.
We decided to share in the warmth and spirit of gratitude in a November Thanksgiving in honour and respect for our American friends. And it was pretty much impossible to pass up a full multi course turkey dinner at Peggy's diner, Snooty Fox. We pulled ourselves out of the pool, spiffied up and put on some 'going out' clothes. And feasted on a fine turkey dinner.
The rest of our visit we ate and drank at the drop of a hat. And it seems like a lot of hats were hitting the ground in Belize! It was so nice for me to have a girl friend to try out a bunch of new restaurants that have recently opened. Adam enjoys going out to eat but he's fairly predictable. When he finds something he likes he sticks with it. And he likes solid 'man-food'. You know, it came from a dead animal or a deep fryer! He tends to shy away from lighter fare.
Whereas Judi and I were game for fancy coffees, vegetarian plates, rich desserts, and if the mood was right, we certainly didn't shy away from a big juicy burger. Yah...we ate and we were happy!
It wasn't all restaurants either. We did lots of cooking at home too. It was fun going to market and picking through all the wonderful fresh fruits and veggies and coming up with a meal plan. I have a Belizean cookbook that I bought years ago when we vacationed here. All the recipes have rum in them. I haven't been really good at using it but Judi was enthusiastic so we delved in!

I hate that I have turned into one of those people who take pictures of their food at every restaurant but damn....we have some really good restaurants! So I hope that you enjoy this peak at some of the foods that we enjoy on a regular basis. And these pictures don't even touch all the fine eating we did at home. I never think to take pictures at home...usually too eager to dig in!

We have a friend that cooks and bakes in her home and sells her wonderful treats. We are so spoiled!
