More of our days in spent in relax mode. It's hot...about 35-40C everyday so we are finding a nice balance between pool and patio work and pool and patio relaxing! Patio is getting really close to being done. We've been pushing sand into the spacing which amounts to lots and lots of sweeping. Every time that we think we've got it covered, a little crack will open up and Adam leaps into action with his shovel and broom. He's a machine!! And then, of course, that earns him some down time and a swim. It's only right.
Made a visit to the garden centre today. I haven't been there for months and the young guy who works there greeted me immediately, "Hello, Miss Mona!"
So nice. We bought plants to finish up around the inside fence. I started the hedge last spring but only did about half because we were fairly sure that we had some construction in our future. Now, it's time to finish the job. I also started to pick plants for the area around the pool. I don't know the names of anything but I know that I want lush and tropical! Not a problem. So tomorrow morning is planting time.

We've had some cooler, cloudy days so I've been able to get a little baking done. I used to consider myself a fairly competent baker but Belize has shaken my confidence greatly! Everything is just a little different. Flour is heavier, sugar is more raw, butter is more watery... We cook with gas (butane) and the stove is not thermostatically controlled so I have to fiddle with the dial to keep the temperature consistent. And the humidity here is insane. Sounds like I'm making excuses and I probably am! It all adds up to make baking a batch of cookies a huge and risky undertaking! But, cookies I made and I'll call them a success. Another little thing that I learned is to freeze them right away. Otherwise the humidity turns them into a big, lumpy blob. And frozen cookies are better, anyways!
